SunButter Thai Chicken Pizza

Ingredients
- 3 prepared pizza crusts
- 1/2 cup Creamy SunButter
- 3 tablespoons water
- 2 tablespoons soy sauce
- 2 tablespoons lime juice
- 2 tablespoons honey
- 1 teaspoon garlic powder
- 2 teaspoons minced ginger
- 1 teaspoon red pepper flakes
- 24 ounces chicken, diced
- 3 cups mozzarella cheese, shredded
- 3 red peppers, sliced
- 12 green onions, chopped
- 1-1/2 cup roughly chopped cilantro
Directions
- Preheat oven to 450ºF.
- In a saucepan, combine SunButter, water, soy sauce, lime juice, honey, ginger, garlic, and red pepper flakes. Cook over medium heat, stirring until everything is melted together.
- Pour half the sauce into a large bowl. Add diced chicken and stir to coat chicken.
- Place pizza crusts on full sheet pan. Spread the remaining sauce on the three crusts. Top each crust with 3/4 cup cheese. Put one-third of chicken mixture, red pepper slices, and green onions on top of each crust. Sprinkle each crust with an additional 1/4 cup of cheese. Bake for 12 to 15 minutes or until cheese has melted and crust is fully cooked and crisp.
- Top with fresh cilantro and serve.
