Asian Broccoli and SunButter Noodle Salad

Ingredients
- 3 lbs Whole wheat spaghetti, cooked
- 3 Tbsp Sesame oil
- 1 1/2 cups SunButter, Creamy
- 11/2 cups Orange juice
- 3 Tbsp Lemon juice
- 1 cup Low sodium soy sauce
- 1/4 cup Granulated sugar
- 1/4 cup Canola oil
- 3 cups Green onions, 2 inch logs
- 3 cups Red pepper, julienne
- 3 Tbsp Garlic, minced
- 3 Jalapeños, seeded and julienne
- 6 cups Broccoli florets
Directions
- Cook pasta and toss with sesame oil.
- Combine SunButter, orange juice, lemon juice, soy sauce, and sugar until mixed well.
- Add canola oil to a pan and sauté vegetables until flavorful and crisp tender.
- Combine vegetables with noodles and dressing and toss well. Serve hot or cold. If serving cold, chill pasta and vegetables before mixing with remaining ingredients.
