SunButter Apple Cinnamon Muffins


3-3/4 cups all purpose flour
4-1/2 teaspoons baking powder*
3 tablespoons cinnamon, ground
3 teaspoons all spice, ground
3/4 teaspoon salt
3/4 cup brown sugar, packed
1-1/2 cup applesauce, unsweetened
3 teaspoons vanilla extract
3 large apples, chopped with skins on
1-1/2 cups milk
3/4 cup Creamy SunButter


Preheat oven to 375ºF. Line muffin tins with paper baking cups; set aside.

In a large mixing bowl, sift together flour and baking powder. Add cinnamon, salt, allspice, and brown sugar. Stir until combined.

In a separate bowl, mix the SunButter, eggs, milk, and vanilla until SunButter is mostly separated. Stir in applesauce.

Add SunButter mixture to dry mixture along with apples and stir until just combined. Evenly divide the batter into prepared muffin tins and bake for approximately 18 minutes.

Cool on a wire rack.

*The chlorophyll in sunflower seeds may react with baking powder, causing the center of the muffin to turn a green color when cool. This is completely harmless! To help keep muffins from turning green, you can reduce baking powder by half, or a splash of lemon juice in the batter may also help.
