Veggie Sammies With SunButter Satay Sauce
4-1/2 cups SunButter Creamy
2-1/4 cups lime juice
3/4 cup water
1 cup hoisin sauce
1/2 cup soy sauce
1/2 cup Sriracha sauce
24 French baguette rolls, 6-inch, split open
6 cups thinly sliced cucumbers
6 cups thinly sliced white onions
6 cups sliced red bell pepper
6 cups sliced purple cabbage
6 cups roughly chopped fresh cilantro
In bowl, combine SunButter, lime juice, water, hoisin sauce, soy sauce, and Sriracha. Mix well.
Spread sauce on both sides of split French Baguettes, then layer with cucumber, onion, and bell pepper. Top with cabbage and cilantro leaves.
SERVING SUGGESTION: Make extra sauce to serve on the side.
