SunButter Banana Raisin Bread


3 cups mashed bananas
2/3 cup plain, low fat yogurt
1 cup SunButter Creamy
6 tablespoons butter, melted
4 large eggs, fresh
1-1/2 cups packed brown sugar
2 teaspoons vanilla extract
1 cup raisins
3 cups whole wheat pastry flour
1/2 cup ground flaxseed meal
1-1/2 teaspoons baking soda*
1/2 teaspoon salt


Place rack in center of oven and heat oven to 350°F. Grease and flour 2 9x5-inch loaf pans. Set aside.

In a large bowl, whisk together mashed bananas, yogurt, SunButter, and melted butter. Whisk in eggs, sugar, vanilla, and raisins.

In another large bowl, whisk together flour, flaxseed meal, baking soda, and salt. Pour banana mixture into dry ingredients. Fold together with a spatula until just combined. Pour the batter into prepared baking pans.

Bake for 55 to 65 minutes, or until a skewer inserted into the center of each loaf comes out clean.

Remove from oven and allow to cool in the pan for 20 minutes before inverting pan onto a wire rack to cool completely.

Slice each loaf to yield 12 slices, one slice per serving.

*The chlorophyll in sunflower seeds may react with baking soda, causing the center of the bread to turn a green color when cool. This is completely harmless! To help keep bread from turning green, you can reduce baking soda by half, or a splash of lemon juice in the batter may also help.
