No-Bake SunButter S’Mores Bars
2 cups SunButter Creamy
2 cups unsalted butter
4 cups graham cracker crumbs
4 cups powdered sugar
4 teaspoons vanilla extract
1/2 cup SunButter Creamy (additional)
2-1/2 cups semi-sweet chocolate chips
5 cups mini marshmallows
Line a 9x13-inch baking pan with parchment or waxed paper cut so that paper sticks up over the edges of the pan by a couple of inches on each side.
In medium sauce pan, melt SunButter and butter. Stir until smooth and remove from heat. Stir in graham cracker crumbs, powdered sugar, and vanilla until well combined. Pour the mixture into the prepared pan and smooth the top.
Combine the additional SunButter and chocolate chips in microwave safe bowl. Microwave for 1 minute, remove from microwave and stir. If mixture is not fully melted return to microwave for 20 second intervals, stirring after each interval. Once smooth, pour mixture over graham cracker mixture and smooth the top.
Cover chocolate layer with mini marshmallows. Place under broiler for about 1 minute or until the marshmallows start to brown.
Refrigerate for 20 to 30 minutes until set.
Using edges of paper, lift from pan and cut 4x6 into 24 squares.
