Mini Muffin SunButter Brownie Bites


1 cup SunButter Creamy
2 large eggs, fresh
2 bananas, medium, very ripe
1/4 teaspoon baking soda*
1 teaspoon vanilla
2 tablespoons honey
1/2 cup semi-sweet chocolate chips
1/4 cup semi-sweet chocolate chips (additional)


Heat oven to 400°F. Spray mini muffin tin with cooking spray or coat with coconut oil.

Place all ingredients except for additional chocolate chips into blender or food processor and blend until well mixed.

Pour batter into mini muffin tin. Sprinkle additional chocolate chips on top of each brownie bite.

Bake 7 minutes or until toothpick inserted into middle of muffin comes out mostly clean, with just a few crumbs stuck to toothpick.

Set muffin tins on rack to cool for 5 minutes, then gently remove brownie bites from muffin tins to fully cool.

*The chlorophyll in sunflower seeds may react with baking soda, causing the center of the muffin to turn a green color when cool. This is completely harmless! To help keep muffins from turning green, you can reduce baking soda by half, or a splash of lemon juice in the batter may also help.
